What’s the difference between clean and dirty smoke?


What is dirty smoke?

Dirty smoke is when your smoker is producing thick white/grey or black clouds of smoke from the chimney/stack. It is not ideal for cooking as it leaves behind an acrid taste on foods, along with a dark soot.

What is Clean Smoke?

Clean smoke is when your smoker is running optimally. the fuel source is getting proper air. No harsh tastes left on food. Chimney is either expelling a faint white, thin blue or no smoke at all.

It takes practice, trial and error to fully grasp the varying levels of smoke during a cook. As you gain experience you will identify whats causing smoke, it is green wood? Perhaps the airway is restricted. Or did you simply put on a fresh log? Along with so many variables.
