Placement matters

When it comes to smoking different meat types, be very aware of your placement. For example, I never put chicken on a rack above any other meat.

Time matters

Time is also a major factor. You wouldn’t want to put a lobster tail on at the same time you place a rack of ribs. Their cook times vary too much. You would place the lobster on roughly 15-20 minutes before putting the ribs to rest.
