What’s your favorite wood to smoke with?
Define favorite?
Favorite is a relative term, but relative to what? Well, location for starters. I am fortunate to do a good bit of travelling as part of my passion. Which means at times I do not have access to my usual wood selection.
What is Clean Smoke?
Clean smoke is when your smoker is running optimally. the fuel source is getting proper air. No harsh tastes left on food. Chimney is either expelling a faint white, thin blue or no smoke at all.
SHEED’S VIEW
It takes practice, trial and error to fully grasp the varying levels of smoke during a cook. As you gain experience you will identify whats causing smoke, it is green wood? Perhaps the airway is restricted. Or did you simply put on a fresh log? Along with so many variables.
