Turkey Bolognese


Ingredients:

- 1 pound ground turkey

- 1 tablespoon olive oil

- 1 onion, finely chopped

- 2 carrots, finely chopped

- 2 celery stalks, finely chopped

- 3 garlic cloves, minced

- 1 can (28 ounces) crushed tomatoes

- 1 cup chicken or vegetable broth

- 2 tablespoons tomato paste

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 1/2 teaspoon dried thyme

- 1 bay leaf

- Salt and pepper, to taste

- Cooked pasta of your choice (such as spaghetti or fettuccine)

- Grated Parmesan cheese, for serving

- Fresh basil leaves, for garnish (optional)


Instructions:

1. In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, and sauté until the vegetables are softened, about 5 minutes.

2. Stir in the minced garlic and cook for an additional minute until fragrant.

3. Add the ground turkey to the pan and break it up with a spatula or spoon. Cook the turkey until it's no longer pink and has started to brown.

4. Pour in the crushed tomatoes, chicken or vegetable broth, and tomato paste. Stir well to combine.
