If you have seen the show, I made a variation of this sauce there. I figured it was time to share a bit of those recipes.

Ingredients:

  • 1 ripe mango, peeled and pitted

  • 2 habanero peppers, seeds removed (adjust quantity for desired heat level)

  • 1 tablespoon honey

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon lime juice

  • Salt, to taste

Instructions:

  • Preparing the Mango and Habaneros:

    • Cut the ripe mango into chunks, discarding the pit.

    • If you prefer a milder heat, use only one habanero pepper. For more heat, use two. Carefully remove the seeds and chop the habaneros into smaller pieces.

  • Blending the Sauce:

    • In a blender or food processor, combine the mango chunks, chopped habanero peppers, honey, apple cider vinegar, and lime juice.

    • Blend the ingredients until you achieve a smooth and consistent sauce.

  • Taste and Adjust:

    • Give the sauce a taste and adjust the seasoning according to your preference. If you'd like it spicier, you can add a few habanero seeds back in. If you prefer it sweeter, add a touch more honey.

  • Straining (Optional) Highly Suggested:

    • If you want a smoother texture, you can strain the sauce through a fine mesh sieve to remove any fibrous bits.

  • Storing the Sauce:

    • Transfer the mango habanero sauce to a clean, airtight jar or bottle. Store it in the refrigerator for up to a week.
