If you have seen the show, I made a variation of this sauce there. I figured it was time to share a bit of those recipes.
Ingredients:
1 ripe mango, peeled and pitted
2 habanero peppers, seeds removed (adjust quantity for desired heat level)
1 tablespoon honey
2 tablespoons apple cider vinegar
1 tablespoon lime juice
Salt, to taste
Instructions:
Preparing the Mango and Habaneros:
Cut the ripe mango into chunks, discarding the pit.
If you prefer a milder heat, use only one habanero pepper. For more heat, use two. Carefully remove the seeds and chop the habaneros into smaller pieces.
Blending the Sauce:
In a blender or food processor, combine the mango chunks, chopped habanero peppers, honey, apple cider vinegar, and lime juice.
Blend the ingredients until you achieve a smooth and consistent sauce.
Taste and Adjust:
Give the sauce a taste and adjust the seasoning according to your preference. If you'd like it spicier, you can add a few habanero seeds back in. If you prefer it sweeter, add a touch more honey.
Straining (Optional) Highly Suggested:
If you want a smoother texture, you can strain the sauce through a fine mesh sieve to remove any fibrous bits.
Storing the Sauce:
Transfer the mango habanero sauce to a clean, airtight jar or bottle. Store it in the refrigerator for up to a week.
