Honey Butter Chicken Biscuit


Ingredients:

  • 4 boneless, skinless chicken thighs

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon cayenne pepper (optional, for added spice)

  • 1 cup buttermilk

  • Vegetable oil (for frying)

  • Goodfeathers Poultry Rub


Prepare the fried chicken:

In a bowl, combine the flour, salt, black pepper, Goodfeathers Poultry Rub

Pour the buttermilk into a separate bowl.

Pat the chicken breasts dry with paper towels, then dip each piece into the buttermilk, ensuring they're fully coated.

Next, dredge the chicken in the seasoned flour mixture, pressing gently to adhere the coating to the chicken.

Set the coated chicken aside on a plate, or cooling rack.

Fry the chicken:

Carefully place the coated chicken breasts in the hot oil and fry for about 6-7 minutes per side, or until they reach an internal temperature of 165°F (74°C) and have a golden brown, crispy exterior.

Once cooked, remove the fried chicken from the oil and drain on a plate lined with paper towels to absorb any excess oil.

Make the honey butter:

In a small bowl, combine the softened butter and honey. Mix until well blended to create the honey butter spread.

Prepare the biscuit:

Preheat your oven to 450°F (230°C).

In a large mixing bowl, whisk together the flour, baking powder, and salt.

Add the cold cubed butter and use a pastry cutter or your fingers to incorporate it into the flour mixture until the mixture resembles coarse crumbs.

Stir in the buttermilk until just combined, being careful not to overmix the dough.

Turn the dough out onto a lightly floured surface and gently pat it into a rectangle about 1 inch thick.

Use a round biscuit cutter or the rim of a glass to cut out biscuit rounds.

Place the biscuit rounds on a baking sheet lined with parchment paper.

Bake the biscuits in the preheated oven for 12-15 minutes, or until they're golden brown.

Assemble the sandwich:

Slice the baked biscuits in half.

Spread a generous amount of the honey butter on both sides of each biscuit.

Place a piece of the crispy fried chicken on the bottom half of the biscuit.

Add any optional toppings you desire, such as pickles, lettuce, and sliced tomato.

Top with the other half of the biscuit to complete the sandwich.
