Ingredients

  • 2 lbs Good Ranchers Black Angus ground beef

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 3 cloves garlic, minced

  • 2 bell peppers (one red, one green), chopped

  • 2 jalapeño peppers, finely chopped (optional for extra heat)

  • 3 tablespoons chili powder

  • 2 teaspoons cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon cayenne pepper (adjust to taste)

  • 1 can (28 oz) crushed tomatoes

  • 1 can (15 oz) tomato sauce

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) black beans, drained and rinsed

  • Salt and black pepper, to taste

  • 1 cup beef broth (or water)

  • Fresh cilantro, chopped (for garnish)

  • Shredded cheddar cheese (for serving)

  • Sour cream (for serving)

Instructions:

  1. Brown the Beef:

    • Heat olive oil in a large pot over medium heat.

    • Add the Good Ranchers Angus ground beef. Cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess grease.

  2. Sauté the Vegetables:

    • To the same pot, add the chopped onion, garlic, bell peppers, and jalapeño peppers. Sauté until the vegetables are softened, about 5-7 minutes.

  3. Add the Spices:

    • Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Cook for another minute until fragrant.

  4. Combine Ingredients:

    • Add the crushed tomatoes, tomato sauce, kidney beans, black beans, salt, pepper, and beef broth to the pot. Stir well to combine.

  5. Simmer the Chili:

    • Bring the chili to a boil, then reduce the heat to low. Simmer uncovered for at least 30 minutes, stirring occasionally. For deeper flavor, let it simmer for up to an hour.

  6. Final Adjustments:

    • Taste and adjust the seasoning with additional salt, pepper, or spices as needed.

  7. Serve:

    • Ladle the chili into bowls. Garnish with chopped cilantro, shredded cheddar cheese, and a dollop of sour cream.

Sheed Tips:

  • This chili can be made in advance and tastes even better the next day.

  • For a smokier flavor, consider adding a bit of chipotle in adobo sauce.

  • Serve with cornbread or over rice for a heartier meal.
