Ingredients
2 lbs Good Ranchers Black Angus ground beef
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 bell peppers (one red, one green), chopped
2 jalapeño peppers, finely chopped (optional for extra heat)
3 tablespoons chili powder
2 teaspoons cumin
1 teaspoon smoked paprika
½ teaspoon cayenne pepper (adjust to taste)
1 can (28 oz) crushed tomatoes
1 can (15 oz) tomato sauce
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
Salt and black pepper, to taste
1 cup beef broth (or water)
Fresh cilantro, chopped (for garnish)
Shredded cheddar cheese (for serving)
Sour cream (for serving)
Instructions:
Brown the Beef:
Heat olive oil in a large pot over medium heat.
Add the Good Ranchers Angus ground beef. Cook, breaking it apart with a spoon, until browned and no longer pink. Drain excess grease.
Sauté the Vegetables:
To the same pot, add the chopped onion, garlic, bell peppers, and jalapeño peppers. Sauté until the vegetables are softened, about 5-7 minutes.
Add the Spices:
Stir in the chili powder, cumin, smoked paprika, and cayenne pepper. Cook for another minute until fragrant.
Combine Ingredients:
Add the crushed tomatoes, tomato sauce, kidney beans, black beans, salt, pepper, and beef broth to the pot. Stir well to combine.
Simmer the Chili:
Bring the chili to a boil, then reduce the heat to low. Simmer uncovered for at least 30 minutes, stirring occasionally. For deeper flavor, let it simmer for up to an hour.
Final Adjustments:
Taste and adjust the seasoning with additional salt, pepper, or spices as needed.
Serve:
Ladle the chili into bowls. Garnish with chopped cilantro, shredded cheddar cheese, and a dollop of sour cream.
Sheed Tips:
This chili can be made in advance and tastes even better the next day.
For a smokier flavor, consider adding a bit of chipotle in adobo sauce.
Serve with cornbread or over rice for a heartier meal.
