Ingredients
4 bone-in, skin-on chicken breasts (or thighs)
2 lemons, one juiced and one sliced
¼ cup olive oil
3 cloves garlic, minced
1 tbsp honey
1 tbsp apple cider vinegar
2 tsp smoked paprika
1 tsp dried thyme
Salt and freshly ground black pepper, to taste
Fresh parsley, for garnish
Instructions:
Marinate the Chicken:
In a large bowl, whisk together the lemon juice, olive oil, minced garlic, honey, apple cider vinegar, smoked paprika, thyme, salt, and pepper.
Place the chicken pieces in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.
Prepare the Barbecue Sauce:
In a small saucepan, combine ketchup, brown sugar, Worcestershire sauce, lemon juice, garlic powder, onion powder, cayenne pepper, salt, and pepper.
Cook over medium heat, stirring occasionally, until the sauce thickens slightly (about 10 minutes). Set aside.
Preheat the Masterbuilt 1050 Grill:
Preheat your Masterbuilt 1050 Digital Charcoal Grill to a medium heat of around 350°F (175°C), ensuring it's stable before cooking.
Grill the Chicken:
Remove the chicken from the marinade, and place it skin-side down on the grill.
Cook for about 6-7 minutes per side, or until the skin is crisp and golden.
Brush the chicken with the prepared barbecue sauce and continue to cook, turning occasionally, until the internal temperature reaches 165°F (74°C). This should take about 25-30 minutes in total.
During the last few minutes, place the lemon slices on the grill to get charred.
Rest and Serve:
Let the chicken rest for a few minutes off the grill. Serve garnished with grilled lemon slices and fresh parsley.
Chef’s Notes:
Keep a close eye on the grill temperature and adjust as needed to maintain even cooking.
