Grilled Lemon Barbecue Chicken

Ingredients

  1. 4 bone-in, skin-on chicken breasts (or thighs)

  2. 2 lemons, one juiced and one sliced

  3. ¼ cup olive oil

  4. 3 cloves garlic, minced

  5. 1 tbsp honey

  6. 1 tbsp apple cider vinegar

  7. 2 tsp smoked paprika

  8. 1 tsp dried thyme

  9. Salt and freshly ground black pepper, to taste

  10. Fresh parsley, for garnish

Instructions:

  1. Marinate the Chicken:

    • In a large bowl, whisk together the lemon juice, olive oil, minced garlic, honey, apple cider vinegar, smoked paprika, thyme, salt, and pepper.

    • Place the chicken pieces in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.

  2. Prepare the Barbecue Sauce:

    • In a small saucepan, combine ketchup, brown sugar, Worcestershire sauce, lemon juice, garlic powder, onion powder, cayenne pepper, salt, and pepper.

    • Cook over medium heat, stirring occasionally, until the sauce thickens slightly (about 10 minutes). Set aside.
