Budget Friendly Bolognese

Canned Tomato Sauce [8 oz]
Canned Diced Tomatoes [14.5 oz]
Salt & Black Pepper [To Taste]
Beef Tallow [1 TBS]
Garlic [4 Large Cloves]
Rigatoni [16 oz]
Green Onion [1 Stalk]

Preparation
Fill a medium-sized pot with 4 quarts of water, add 2 tbsp of salt and set to medium heat.
The Cook
In a Medium sized dutch oven add 1 tbs of beef tallow, and set stove top to medium heat. Allow tallow to fully render, then add all of your ground beef. Break the beef apart so it can cook evenly, as the beef cooks start working on the aromatics.
Mince or finely chop all 4 garlic cloves, as well as the basil and green onion. Make sure to remove the basil leaves from the stem, then add the stem to the pot of water to add additional flavor.
Once the beef has browned all the way add the green onion and stir. Then pour in all of the tomato sauce and canned diced tomatoes. At this time the water should be boiling, add 1 tbsp of beef tallow and all of the rigatoni pasta. Cook for 7-8 minutes or until al dente.
Remove pasta from heat and strain, and make sure to save a cup of pasta water. This is a great habit and helps in case the end result is thicker than desired. Add strained pasta directly into the pot and begin to stir.
Top with your favorite cheese, plate, and serve. Enjoy!
