Cook For Temperature Not Time

Believe it or not, I enjoy making turkey because it gives me a chance to change something that is otherwise thought of as dry and flavorless. I have realized the biggest issue isn’t really the cook itself, but the prep. Many just defrost, which is often times rushed or done incorrectly. Then a basic layer of seasoning, placed in a roasting pan, and tossed in the oven. Granted nothing truly wrong with that but you can’t be surprised when the results, are as basic as the prep work.

Just include these extra steps into your cook, and your tastebuds will thank you!

The turkey is the star of the show, but with proper preparation the flavors can truly be elevated. Thats why brining your turkey is so important. Whats a brine? Its often times liquid rubs and herb mixture you can use to soak your turkey in overnight to allow the flavors to penetrate deep into the meat. Heres what I put into my brine.



  • Peppercorn
  • Star Anise
  • Red Pepper Flakes
  • Celery Stalk Ends
  • Rosemary
  • Green Onion
  • Fresh Garlic
  • Lemon Slices
  • Mexican Oregano
  • Salt
  • Vinegar
  • White Onion
  • Bay Leaves


Heres an extra little tip for making your brine. Get a skillet or pan set it to medium heat and drop your dry ingredients into the pan. Make sure to keep the pan moving, toasting them tike this helps release the aromatics and flavorful notes.

Remember this is just what I choose to put into my brine, you can use all the elements or certain parts either way it will improve the end result of the cook. When creating the brine, also keep in mind what rub you will be seasoning your turkey with once its ready for the smoker. Create a brine that complements the rub, not over powers.
